The traceability of extra virgin olive oil (EVOO) could guarantee the authenticity of the product and the protection of the consumer if it is part of a system able to certify the traceability information. The purpose of this paper was to propose and apply a complete electronic traceability prototype along the entire EVOO production chain of a small Italian farm and to verify its economic sustainability. The full traceability of the EVOO extracted from 33 olive trees from three different cultivars (Carboncella, Frantoio and Leccino) was considered. The technological traceability system (TTS; infotracing) consists of several open source devices (based on radio frequency identification (RFID) and QR code technologies) able to track the EVOO from the standing olive tree to the final consumer. The infotracing system was composed of a dedicated open source app and was designed for easy blockchain integration. In addition, an economic analysis of the proposed TTS, with reference to the semi-mechanized olive harvesting process, was conducted. The results showed that the incidence of the TTS application on the whole production varies between 3% and 15.5%, (production from 5 to 60 kg tree−1). The application at the consortium level with mechanized harvesting is fully sustainable in economic terms. The proposed TTS could not only provide guarantees to the final consumer but could also direct the farmer towards precision farming management.

The market for imported, premium priced foods has increased dramatically over recent years, as consumers become ever more aware of products originating from around the world. There are many food products that are of superior quality (taste, texture, fragrance etc.) because of the locale in which they are cultivated. Environmental conditions, such as local climate and soil characteristics, combine to yield crops that exhibit specific traits. Clearly, higher quality products demands higher market prices, therefore unscrupulous traders may attempt to increase profits by deliberately mislabelling foods, or by increasing the volume of a good quality batch through adulteration with sub-standard produce.

In recent years, there has been increasing legislation to protect the rights of both the consumer and honest producers. On 2009 the European Union (EU) Member States agreed to require origin labelling for virgin and extra virgin olive oils (EC Regulation 182/2009) to defend consumers need about true characteristics and origin. To enforce these laws, a measure of the authenticity of samples must be made, most often in the form of proving the presence/absence of adulterants, or verifying geographical or cultivar origin by comparison with known and reliable samples.

ALL OUR KNOW HOW IS ON YOUR BOTTLE!
Our labels always specify the country of origin, the domain, the producer’s name and the mill, the harvest date, and the varieties of olives. We rigorously inspect all our batches of Olive Oil each year. Production process is traced from harvest to bottling to delivery. Every bottle or tin of Oliviers&Co extra virgin olive oil will always include the “Best Before Date” which reflects the last day Oliviers&Co will sell that particular oil to ensure it is enjoyed at its prime. Alike wine, an olive oil is not getting better with time, keep it away from light!



A UNIQUE TRACEABILITY FROM THE ORCHARD TO THE BOTTLE
We control more than 1200 batches per year, both on the sensory and gustatory conformity, but also by a rigorous physicochemical analysis. All our oils are then bottled in our workshop in Mane in Haute-Provence. Because we don't want to hide anything from our customers, each label specifies the country of origin, the name of the estate and the producer, the date of harvest and the olive varieties.
